Who doesn’t like the taste of smoked chicken? Try these spring rolls filled with the goodness of Arabian flavors- citrusy black dry lime, smoked chicken and a nutty yet creamy Tahini dip!

 

Ingredients: (makes 10 medium sized spring rolls)

1. Spice mix:

• Coriander seeds, roasted, 1/2 tablespoon

• Cumin seeds, roasted, 1/2 tablespoon

• Dried Orange peel, 1, small-medium sized

• Cinnamon, 1, small

• Cardamom, 4

• Caraway/Shahzeera, 1/4 teaspoon

• Black pepper corms, 1/4 teaspoon

• Dried Black lemon, less than half

• Salt, a teaspoon

2. Chicken breasts, 2, boneless, Skinless, cut in half

3. Raw Papaya, ground, 1/2 teaspoon

4. Olive Oil, 4-5 tablespoons

5. Onions, 3-4 tablespoons, chopped

6. Red bell pepper, 3-4 tablespoons, chopped

7. Green bell pepper, 3-4 tablespoons, chopped

8. Salt, to taste

9. Chicken stock, 6-8 tablespoons

10. Cornflour, 1 teaspoon

11. Coal, a piece

12. Springroll wrappers, about 10.

13. Cooking Oil, 3-4 tablespoons

 

 

 

14. Sauce:

• Mayonnaise, 1/2 cup

• Tahini, less than 1/4 cup

• Lemon juice, a teaspoon

• Garlic, 1/2 teaspoon

• Salt, 1/4 teaspoon

• Curd, whisked, thin, as required

• Olive Oil, about a tablespoon

 

Preparation:

1. Place all the spices in a blender and blend to a fine powder.

2. Marinate the chicken pieces with 1 and 1/2 tablespoons of the prepared spice mix. Reserve the rest for later. Also add raw papaya and a drizzle of olive oil. Coat well and marinate for at least an hour. Refrigerate overnight for best results.

3. Pan fry the chicken in 3 tablespoons of cooking oil over medium-heat until cooked through.

4. Lightly cool and dice the chicken. Return to the pan with all its juices.

5. Add 2 tablespoons each of onions, red bell pepper and green bell pepper.

6. Also add a tablespoon of olive oil, about a teaspoon of the prepared spice mix. Turn up the heat and toss for a minute.

7. Add chicken stock mixed with 1 teaspoon of cornflour. Cook for a few seconds and turn off the heat.

8. Make a well in the centre of the pan to place a heat resistant bowl. Place a red hot coal in the bowl and pour a few drops of cooking oil on it. Immediately cover and allow it to rest for a few minutes.

9. Remove the bowl. Add a tablespoon each of onions and bell peppers and adjust the seasoning. Give it a good mix.

10. Prepare the spring rolls using ready made wrappers and seal with a slurry of all purpose flour. Deep fry over medium heat until golden brown or freeze for use later.

11. Prepare the sauce- into a bowl add mayonnaise, Tahini, lemon juice, garlic, salt and olive oil. Give it a mix. Add curd until the sauce reaches the desired consistency.
