Hate cauliflower? This recipe will change your mind. Try this quick and easy crispy cauliflower tossed in an aromatic spiced sauce.
Ingredients:
1. All-purpose flour, 2 tablespoons, heaped.
2. Corn flour, 3 tablespoons, heaped.
3. Red Chilli, 1 teaspoon.
4. Turmeric, 1/2 teaspoon.
5. Coriander powder, 1 teaspoon, roasted.
6. Cumin powder, 1/2 teaspoon, roasted.
7. Garam masala, 1/4 teaspoon
8. Salt, to taste
9. Lemon juice, 1/2 tablespoom or to taste
10. Cauliflower florets, 3 cups, washed and cleaned.
11. Curry leaves, a few sprigs
12. Cooking oil, 2 tablespoons
13. Garlic, 1 tablespoon, chopped.
14. Ginger, 1 tablespoon, chopped.
15. Green Chilli, 4, slit.
16. Dry Red Chilli, 3.
17. Red Chilli, 1/2 teaspoon.
18. Coriander powder, 1 teaspoon, roasted.
19. Dark Soy Sauce, 1 & 1/2 tablespoons.
20. Vegetable stpck cube, a quarter.
21. Whisked Curd, 3 tablespoons.
22. Onions, about half, quartered.
23. Capsicum, about half.
24. Carrot, one, small, sliced.
Preparation:
1. Mix all-purpose flour, corn flour, red chilli powder, turmeric powder, coriander powder, cumin powder, garam masala and salt in a large shallow bowl. Also add a squeeze of lemon juice.
2. To make the batter, add water little by little and make a thick paste without lumps. Add the cauliflower florets to the mix and stir several until it is well coated.
3. Deep fry immediately in small batches over medium heat until golden brown and crispy. When almost done add a few curry leaves to the oil for extra flavor.
4. Alternately, you could also prepare a sauce for this crispy fried cauliflower. Heat oil in a large shallow pan. Add chopped ginger and garlic and cook over medium heat for a few seconds or until the raw smell goes away.
5. Then add green chillies, curry leaves, dry red chillies, red chilli powder, roasted coriander powder, dark soya sauce and some vegetable stock dissolved in a few tablespoons of water. Continue to cook for a few seconds.
6. Now turn down the heat to low and add whisked curd. Continue to stir until it comes to a boil. Reduce over medium heat for a minute or so.
7. Toss in the prepared cauliflower, onion, capsicum and carrots. Saute for a minute or two and turn off the heat.
8. Serve hot with roti or parathas or as a side with chapathi.
