Have you tried these dahi vade made from gram flour? Its a popular evening hyderabadi snack, super quick to make and serve a crowd.

Ingredients:

1. Besan, 125g, about a cup
2. Ginger-garlic, 1 teaspoon
3. Red chilli, 1/2 teaspoon
4. Turmeric, 1/2 teaspoon
5. Cumin, 1/2 teaspoon
6. Salt, 3/4 teapsoon
7. Green chillies, 3-4
8. Cooking soda, 1/4 teaspoon
9. Coriander leaves, a bunch, chopped
10. Water, as required
11. Cooking Oil, for deep frying
12. Curd, 2 cups
13. For the tadka:
• Oil, 3- 4 tablespoons
• Cumin, 1 teaspoon
• Dry Red Chilli, 2-3
• Curry leaves, 2 sprigs
• Turmeric, 1/4 teaspoon

Preparation:
1. Into a bowl add besan, ginger-garlic, red chilli, cumin and turmeric powder, salt, 1 chopped green chilli, a few coriander leaves and cooking soda. Give it a mix and slowly add water to the mixture to make a medium thick batter without lumps. Let it rest for 15-20 minutes.
2. Heat oil in a kadai over medium heat. With the help of a spoon, drop spoonfuls of batter into the oil and deep fry until golden brown and set aside.
4. Prepare the tadka: heat some cooking oil in a pan and add cumin seeds. After they have turned lighlty brown, add dry red chillies and curry leaves. After a few seconds, turn off the heat and add turmeric. Mix and set aside.
5. Into a serving bowl, whisk some curd. Add 2- 1 & 1/2 cups of water and make a semi thick curd mix. Do not make it watery. Add some green chillies, salt, cordiander leaves and give it a quick mix. Dunk the prepared vada into the curd.
6. Add the prepared tadka, and soak for about 20-30 minutes before serving.
